Ingredients

  • 1½ cups broccoli florets

  • 2 carrots, sliced

  • 1 zucchini, sliced

  • 1 red bell pepper, chopped

  • 1 yellow squash, sliced

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 2 tablespoons grated parmesan cheese (optional)

  • 1 tablespoon fresh parsley, chopped

Instructions

  • Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.

  • Wash and prepare all vegetables, cutting them into evenly sized pieces for even roasting.

  • Place broccoli, carrots, zucchini, bell pepper, and yellow squash in a large mixing bowl.

  • Drizzle with olive oil and add minced garlic, Italian seasoning, salt, and black pepper.

  • Toss well until all vegetables are evenly coated.

  • Spread the vegetables in a single layer on the prepared baking sheet.

  • Roast for 20–25 minutes, stirring halfway through, until the vegetables are tender and lightly golden around the edges.

  • Remove from the oven and sprinkle with grated parmesan cheese if desired.

  • Garnish with fresh chopped parsley and serve warm
