Ingredients

  • 3 cups broccoli florets
  • ½ cup cashews (roasted preferred)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon oyster sauce (or vegetarian alternative)
  • 1 teaspoon cornstarch
  • ½ cup water
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 teaspoon sugar
  • Optional: red pepper flakes or chili sauce

Instructions

  • In a bowl, mix soy sauce, oyster sauce, water, sugar, and cornstarch to create the sauce. Set aside.
  • Heat vegetable oil in a large pan or wok over medium-high heat.
  • Add garlic and ginger, sauté for 30 seconds until fragrant.
  • Add broccoli florets and stir-fry for 4–5 minutes until bright green and slightly tender.
  • Add cashews and stir to combine.
  • Pour in the prepared sauce and stir continuously until thickened and evenly coated.
  • Drizzle with sesame oil and mix well.
  • Serve hot over rice or noodles.
