Ingredients

For the cake:

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter (softened)
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 tbsp lemon zest
  • 1 tbsp lime zest
  • ¼ cup fresh lemon juice
  • ¼ cup fresh lime juice
  • 1 cup buttermilk
  • 1 tsp vanilla extract

For the glaze:

  • 1 ½ cups powdered sugar
  • 2 tbsp lemon juice
  • 1 tbsp lime juice

Instructions

  1. Preheat oven to 175°C (350°F) and grease a Bundt pan well.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in lemon zest, lime zest, and vanilla extract.
  6. Alternate adding dry ingredients and buttermilk, starting and ending with dry ingredients.
  7. Mix in lemon and lime juice until just combined.
  8. Pour batter into prepared Bundt pan and smooth the top.
  9. Bake for 45–55 minutes, until a toothpick inserted comes out clean.
  10. Cool in pan for 10–15 minutes, then transfer to a wire rack to cool completely.
  11. Mix glaze ingredients until smooth.
  12. Drizzle glaze over cooled cake and let set before serving.
