Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs

  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups chocolate chips (or your preferred mix-ins like M&Ms, nuts, or raisins)
  • 1 quart of your favorite ice cream (vanilla, chocolate, strawberry, etc.), softened slightly for easy spreading

Instructions

  1. Make the cookies: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats. Cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract. In a separate bowl, whisk together flour, baking soda, and salt, then gradually add to the wet mixture. Fold in chocolate chips or other mix-ins.
  2. Shape the cookies: Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheets about 2 inches apart. Flatten each cookie slightly with a spoon or your fingers.
  3. Bake the cookies: Bake for 8-10 minutes or until the edges are golden brown but the centers remain soft. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  4. Assemble the ice cream sandwiches: Once the cookies are completely cooled, spread a generous scoop of softened ice cream onto the flat side of one cookie and place another cookie on top to form a sandwich. Optionally, roll the edges in mini chocolate chips, sprinkles, or crushed nuts.
  5. Freeze the sandwiches: Place the assembled ice cream sandwiches on a baking sheet and freeze for 1-2 hours to firm up the ice cream.
