Chipotle Chicken is a smoky, spicy, and flavorful dish made with chicken marinated in chipotle peppers, lime juice, and warm spices, then grilled, baked, or sautéed to perfection. It’s juicy, bold, and versatile for a variety of meals.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 23 chipotle peppers in adobo sauce (canned)
  • 2 tablespoons adobo sauce (from the can)
  • 2 tablespoons lime juice (about 1 lime)
  • 2 tablespoons olive oil
  • 3 garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Optional toppings: chopped cilantro, lime wedges, avocado slices

Instructions

  1. In a blender or food processor, combine chipotle peppers, adobo sauce, lime juice, olive oil, garlic, cumin, paprika, oregano, salt, and black pepper. Blend until smooth.
  2. Place chicken in a shallow dish or resealable bag. Pour marinade over chicken, coating both sides. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat grill, skillet, or oven to 400°F (200°C).
  4. Grill or cook chicken for 6–8 minutes per side, or until internal temperature reaches 165°F (74°C) and edges are slightly charred. If baking, place chicken on a lined baking sheet and bake for 20–25 minutes.
  5. Remove from heat and let rest for 5 minutes before slicing.
  6. Serve with rice, tortillas, salad, or your favorite sides. Garnish with cilantro, lime wedges, or avocado as desired.

Notes

Add honey or brown sugar to the marinade for a hint of sweetness.Use Greek yogurt in the marinade for a creamier texture.Make extra chicken to use in tacos, bowls, wraps, or salads throughout the week.Adjust spiciness by using fewer chipotle peppers or removing the seeds.
