Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups finely grated carrots
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: 1/4 cup raisins
  • Optional: 1/4 cup crushed pineapple, drained
  • For the frosting:
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat eggs, granulated sugar, and brown sugar until well combined.
  4. Add oil and vanilla extract; mix until smooth.
  5. Stir in grated carrots and optional add-ins like nuts, raisins, or pineapple.
  6. Fold dry ingredients into wet ingredients just until combined—do not overmix.
  7. Divide batter evenly among liners, filling each about 2/3 full.
  8. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. For frosting, beat cream cheese and butter until smooth and fluffy.
  11. Add powdered sugar and vanilla extract; beat until light and creamy.
  12. Frost cooled cupcakes using a spatula or piping bag.
