Avocado pesto is a creamy, rich, and vibrant twist on the classic basil pesto. Made with creamy avocado, fresh basil, and lemon juice, this version is lighter, healthier, and just as flavorful. It’s perfect for pasta, toast, or as a dip, offering a unique and refreshing element to your meals.

Ingredients

  • 2 ripe avocados, peeled and pitted
  • 1 cup fresh basil leaves
  • 1/4 cup walnuts or pine nuts
  • 2 cloves garlic
  • 1/4 cup lemon juice
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • 1/4 cup water (adjust for desired consistency)

Instructions

  1. Blend the Ingredients: In a food processor, combine the avocados, basil, walnuts or pine nuts, garlic, lemon juice, and olive oil. Pulse until smooth and creamy.
  2. Adjust Consistency: Add water, one tablespoon at a time, until the pesto reaches your desired consistency.
  3. Season and Serve: Taste the pesto and adjust seasoning with salt and pepper. Serve immediately with pasta, on toast, as a dip, or in any way you like!
