Texas Sheet Cake Cookies are a fun twist on the classic Texas Sheet Cake, transforming the rich, chocolatey cake into bite-sized cookies with the same irresistible chocolate frosting. These soft, chewy cookies are topped with a creamy, smooth chocolate frosting that melts in your mouth, making them perfect for parties, potlucks, or any occasion. For the cookies:
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsweetened cocoa powder
1/2 cup buttermilk
For the frosting:
1/2 cup unsalted butter
1/4 cup milk
1/4 cup unsweetened cocoa powder
3 1/2 cups powdered sugar
Prepare the cookies:
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
In a large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 3 minutes. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
In a separate bowl, whisk together the flour, baking soda, salt, and cocoa powder. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined; the dough will be thick but manageable.
Bake the cookies:
Drop rounded spoonfuls of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart. Prepare the frosting:

Remove from heat and gradually stir in the powdered sugar and vanilla extract until the frosting is smooth and creamy. Frost the cookies:
