Taco Pasta is a creamy, cheesy one-pot fusion dish that combines the bold flavors of tacos with comforting pasta. Loaded with seasoned ground beef, tomatoes, cheese, and taco toppings, it’s an easy, family-friendly meal ready in under 30 minutes.

Ingredients

  • 1 lb ground beef
  • 8 oz pasta (rotini, penne, or shells)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 can (10 oz) diced tomatoes (with green chiles, optional)
  • 1/2 cup tomato sauce or salsa
  • 2 cups beef broth or water
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese or sour cream
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional toppings: green onions, cilantro, avocado, jalapeños

Instructions

  1. In a large pot or deep skillet, heat olive oil over medium heat.
  2. Add diced onion and sauté until translucent, about 3 minutes.
  3. Stir in garlic and cook for another 30 seconds.
  4. Add ground beef, season with salt and pepper, and cook until browned. Drain excess grease.
  5. Stir in taco seasoning, diced tomatoes, tomato sauce or salsa, and beef broth.
  6. Add uncooked pasta and stir to combine.
  7. Bring to a boil, then reduce heat to a simmer. Cover and cook for 10–12 minutes, stirring occasionally, until pasta is tender.
  8. Once pasta is cooked, stir in cream cheese or sour cream and shredded cheddar.
  9. Mix until cheese is melted and sauce is creamy.
  10. Serve hot with your favorite taco-inspired toppings.

Notes

Use ground turkey, chicken, or plant-based meat for variation.Add black beans, corn, or bell peppers for extra nutrition.Adjust heat by using mild or spicy taco seasoning or salsa.Try other cheeses like pepper jack or Monterey Jack for variety.To reheat, add a splash of broth or water to loosen the sauce.
