Taco Casserole combines the bold flavors of a taco with the comforting heartiness of a casserole. Layered with seasoned ground beef, beans, cheese, and crunchy tortilla chips, it’s a crowd-pleasing dish that’s both satisfying and easy to prepare.

Ingredients

  • 1 pound lean ground beef
  • 1 packet taco seasoning mix
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (10-ounce) can diced tomatoes with green chilies (such as Rotel)
  • 2 cups shredded cheddar cheese
  • 3 cups tortilla chips, lightly crushed
  • 1/2 cup sour cream
  • Optional toppings: diced tomatoes, chopped green onions, sliced black olives, shredded lettuce, salsa

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, cook the ground beef until browned. Drain any excess fat.
  3. Stir in the taco seasoning mix, black beans, corn, and diced tomatoes with green chilies. Cook for an additional 5 minutes, allowing the flavors to meld.
  4. In a greased 9×13-inch baking dish, spread a layer of crushed tortilla chips. Top with half of the beef mixture, then sprinkle with 1 cup of shredded cheddar cheese. Repeat the layers with the remaining chips, beef mixture, and cheese.
  5. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and let it sit for 5 minutes before serving. Top with sour cream and any optional toppings you desire.
