Taco Casserole is a hearty, layered bake that combines all your favorite taco flavors — seasoned beef, beans, cheese, and tortillas — into one cheesy, comforting dish. Perfect for busy weeknights, potlucks, or family dinners.

Ingredients

  • 1 lb ground beef or ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) black beans or pinto beans, drained and rinsed
  • 1 cup corn kernels (optional)
  • 1 can (14 oz) diced tomatoes or 1 cup salsa
  • 2 cups shredded cheddar or Mexican blend cheese
  • 6 flour or corn tortillas, cut into strips
  • Salt and pepper to taste
  • Optional toppings: sour cream, jalapeños, lettuce, diced tomatoes, avocado, cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened.
  3. Add ground beef or turkey and cook until browned. Drain any excess fat.
  4. Stir in taco seasoning, beans, corn, and diced tomatoes or salsa. Cook for 2–3 minutes until heated through.
  5. Lightly grease a 9×13-inch baking dish. Spread a layer of tortilla strips on the bottom.
  6. Add half of the meat mixture over the tortillas and top with a layer of cheese.
  7. Repeat the layers (tortillas, meat, cheese), finishing with cheese on top.
  8. Bake uncovered for 20–25 minutes, or until the cheese is melted and bubbly.
  9. Remove from oven and let rest for 5 minutes before slicing.
  10. Top with sour cream, avocado, cilantro, or your favorite toppings before serving.

Notes

Make it vegetarian by replacing meat with lentils or plant-based crumbles.Use crushed tortilla chips instead of tortillas for a crunchy version.Toast tortillas before layering to avoid sogginess.Can be assembled a day in advance and baked later.Freeze leftovers for up to 2 months.
