Sweet Potato Tacos are a delicious, colorful, and wholesome vegetarian meal made with roasted sweet potatoes and your favorite toppings. Perfect for weeknight dinners or meal prep, these tacos are flavorful, satisfying, and easy to customize.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 1/2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 4 corn or flour tortillas
  • Optional toppings: black beans, avocado, red onion, cilantro, lime wedges, salsa, cheese, sour cream, slaw

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Peel and dice the sweet potatoes into small cubes.
  3. In a bowl, toss the sweet potatoes with olive oil, chili powder, cumin, garlic powder, and salt.
  4. Spread the seasoned sweet potatoes on a baking sheet in a single layer.
  5. Roast for 25–30 minutes, flipping halfway through, until tender and slightly crispy.
  6. While the potatoes roast, warm the tortillas in a dry skillet or microwave.
  7. Prepare your toppings: rinse black beans, slice avocado, chop red onion, etc.
  8. Assemble the tacos by filling each tortilla with roasted sweet potatoes and your choice of toppings.
  9. Finish with a squeeze of lime and serve immediately.
