Sweet Potato Bites are oven-roasted rounds of sweet potato that are crispy on the edges and soft in the center, perfect for topping with sweet or savory flavors. They’re a fun and healthy appetizer, snack, or party dish that’s naturally gluten-free and endlessly customizable.

Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: goat cheese, cream cheese, pecans, dried cranberries, honey, cinnamon, fresh herbs

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash sweet potatoes and slice into 1/2-inch thick rounds (peeling is optional).
  3. In a large bowl, toss sweet potato rounds with olive oil, salt, and pepper.
  4. Arrange in a single layer on the prepared baking sheet.
