Ingredients

  • 1 pound pizza dough
  • 1 medium sweet potato, peeled and thinly sliced
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme or rosemary
  • Salt, to taste
  • Black pepper, to taste
  • Cornmeal for dusting

Instructions

  • Preheat the oven to 425°F. Prepare a pizza pan, baking sheet, or pizza stone with a light dusting of cornmeal.
  • Toss the sweet potato slices with 1 tablespoon olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 10 to 12 minutes until slightly tender.
  • Meanwhile, heat the remaining olive oil in a skillet over medium-low heat. Add the sliced onions and cook slowly for 15 to 20 minutes, stirring occasionally, until deeply golden and caramelized.
  • Roll out the pizza dough onto the prepared pan or stone.
