Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 120g (4 oz) cream cheese, softened
  • 2 cloves garlic, minced
  • ½ cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Italian seasoning
  • Toothpicks or kitchen twine

Instructions

  • Preheat oven to 190°C (375°F) and lightly grease a baking dish.
  • Slice chicken breasts horizontally to create a pocket or pound them thin.
  • In a bowl, mix spinach, cream cheese, garlic, and mozzarella.
  • Season chicken with salt, pepper, paprika, and Italian seasoning.
  • Spoon filling onto each chicken piece.
  • Roll tightly and secure with toothpicks or kitchen twine.
  • Place seam-side down in the baking dish and drizzle with olive oil.
  • Bake for 25–30 minutes, until chicken reaches 75°C (165°F) internally.
  • Let rest for a few minutes before serving.
