Instructions

  • Preheat the oven: Preheat your oven to 375°F (190°C). Lightly grease a large baking dish or casserole dish.

  • Prepare the chicken: Using a sharp knife, carefully cut a pocket into each chicken breast by slicing horizontally through the thickest part of the breast, leaving about ½ inch on each side to create a pocket for the stuffing.

  • Make the stuffing: In a small bowl, combine the cream cheese, shredded mozzarella, Parmesan cheese, minced garlic, sautéed spinach (if using), dried oregano, dried basil, salt, and pepper. Mix well until smooth and combined.

  • Stuff the chicken: Spoon the stuffing into each chicken breast pocket. Don’t overstuff; pack it lightly to avoid spilling. Secure the opening with toothpicks if necessary.

  • Cook the chicken: Heat the olive oil and butter in a large oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and cook for 4-5 minutes per side, until golden brown.

  • Bake the chicken: Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is fully cooked through.

  • Serve: Let the chicken rest for 5 minutes before serving. Remove the toothpicks, garnish with fresh herbs if desired, and serve hot with your favorite sides.
