Strawberry Truffles combine creamy white chocolate with the sweet, tart flavor of strawberries in a decadent bite-sized treat. Coated in rich chocolate and customizable with various toppings, these truffles are a perfect indulgence for any occasion.

Ingredients

  • 1 cup freeze-dried strawberries (or fresh strawberries, puréed)
  • 1/2 cup heavy cream
  • 8 oz white chocolate (or semi-sweet chocolate, depending on preference)
  • 1 teaspoon vanilla extract
  • 8 oz milk or dark chocolate (for dipping)
  • Sprinkles, chopped nuts, or cocoa powder (optional, for garnish)

Instructions

  1. Prepare the strawberries: If using freeze-dried strawberries, crush them into a powder. If using fresh strawberries, purée them and strain out excess liquid.
  2. Heat the cream: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat just before it boils.
  3. Melt the chocolate: Add chopped white chocolate to the warm cream. Stir until smooth and fully melted. Let the mixture cool slightly.
  4. Add strawberry puree: Stir in the strawberry powder or purée and vanilla extract into the chocolate mixture. Let it cool to room temperature.
  5. Chill the mixture: Refrigerate for 2-3 hours, until firm enough to scoop.
  6. Shape the truffles: Scoop the chilled mixture into balls and place them on a parchment-lined baking sheet. Refrigerate again for 30 minutes.
  7. Coat the truffles: Melt the dipping chocolate and dip each truffle, tapping off excess chocolate. Decorate with sprinkles, chopped nuts, or cocoa powder while the chocolate is still wet.
  8. Set the truffles: Allow the truffles to cool at room temperature for about 30 minutes or refrigerate for 15 minutes until set.
  9. Serve: Enjoy your strawberry truffles, or store them in an airtight container in the refrigerator.

Notes

For a richer flavor, use dark chocolate for dipping.Try rolling the truffles in toasted coconut or graham crackers for a unique texture.If using fresh strawberries, make sure to strain out excess moisture to avoid soggy truffles.
