Strawberry Tiramisu is a delightful twist on the classic Italian dessert, featuring fresh strawberries, delicate ladyfingers soaked in a light strawberry syrup, and a rich mascarpone cream. This refreshing dessert combines the creamy texture of tiramisu with the fruity sweetness of strawberries, making it a perfect treat for any occasion, especially during spring or summer.

Ingredients

For the strawberry syrup:

  • 1 pound fresh strawberries, hulled and sliced

  • 1/4 cup sugar

For the coffee soak:

  • 1 cup brewed espresso or strong coffee (cooled)

  • 2 tablespoons coffee liqueur (optional)

For the mascarpone cream:

  • 8 oz mascarpone cheese, softened

  • 1 cup heavy cream

  • 1/2 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 tablespoon lemon juice (optional, for extra brightness)

For the layers and garnish:

  • 1 package ladyfingers (about 24)

  • Fresh strawberries, for garnish

Instructions

  • Prepare the strawberry syrup: In a small saucepan, combine the sliced strawberries and 1/4 cup sugar. Cook over medium heat for 5-7 minutes, stirring occasionally, until the strawberries release their juices. Gently mash the strawberries to release more flavor. Let the syrup cool completely.

  • Make the mascarpone cream: In a large mixing bowl, whisk together mascarpone cheese, heavy cream, powdered sugar, vanilla extract, and lemon juice (if using) until smooth and creamy, forming soft peaks. Be careful not to overmix.

  • Prepare the coffee soak: In a shallow bowl, combine brewed coffee and coffee liqueur (if using). Stir to combine.

  • Assemble the tiramisu: Quickly dip each ladyfinger into the coffee soak for 1-2 seconds per side, ensuring they don’t become too soggy. Layer the soaked ladyfingers in the bottom of a 9×9-inch dish. Spread half of the mascarpone cream mixture over the ladyfingers. Drizzle half of the strawberry syrup over the cream layer. Add another layer of soaked ladyfingers on top and spread the remaining mascarpone cream mixture over the second layer.

  • Chill and set: Cover the tiramisu and refrigerate for at least 4 hours, or overnight, for the best flavor and texture.

  • Serve and garnish: Top the tiramisu with fresh strawberry slices and any remaining strawberry syrup. Serve chilled.

Notes

  • Chocolate Strawberry Tiramisu: Add grated chocolate or cocoa powder between the layers or drizzle melted chocolate on top for extra richness.

  • Vegan Tiramisu: Use dairy-free ladyfingers, coconut cream or cashew cream instead of mascarpone, and coconut whipped cream in place of heavy cream for a vegan version.

  • Fruit Variations: Swap strawberries for other fruits like raspberries, blueberries, or peaches for a different twist on this classic dessert.
