This Strawberry Chocolate Galette is a rustic, free-form tart that features a buttery, flaky crust filled with fresh strawberries and rich chocolate. Easy to make and visually stunning, it’s a perfect balance of fruity sweetness and indulgence.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 34 tablespoons ice water
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/3 cup semi-sweet or dark chocolate, chopped or chips
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (optional, for sprinkling)

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt.
  2. Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Add ice water 1 tablespoon at a time, mixing just until the dough comes together. Shape into a disk, wrap in plastic, and chill for at least 30 minutes.
  4. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  5. In a separate bowl, toss sliced strawberries with sugar, cornstarch, lemon juice, and vanilla extract. Let sit for 10–15 minutes.
  6. Roll out the chilled dough into a 12-inch circle on a floured surface. Transfer to the prepared baking sheet.
  7. Sprinkle chopped chocolate evenly in the center of the dough, leaving a 2-inch border.
  8. Spoon the strawberry mixture over the chocolate.
  9. Fold the edges of the dough up and over the filling, pleating as needed.
  10. Brush the crust with egg wash and sprinkle with coarse sugar if using.
  11. Bake for 35–40 minutes, or until the crust is golden and the filling is bubbly.
  12. Let the galette cool for at least 15–20 minutes before serving. Serve warm or at room temperature.
