Starbucks Pumpkin Scones are tender, warmly spiced pastries topped with a sweet vanilla glaze and spiced icing drizzle. These homemade scones capture the cozy flavors of fall and are perfect for breakfast or an afternoon treat.

Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup brown sugar
  • 1 tbsp baking powder
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 3 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • For the glaze:
  • 1 cup powdered sugar
  • 2 tbsp milk or cream
  • 1/2 tsp vanilla extract
  • For the spiced drizzle:
  • 1/2 cup powdered sugar
  • 1/4 tsp pumpkin pie spice
  • 12 tsp milk or cream

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together pumpkin puree, egg, heavy cream, and vanilla extract.
  5. Add wet ingredients to dry mixture and stir until just combined. Do not overmix.
  6. Turn dough onto a floured surface and shape into a 1-inch thick circle.
  7. Cut into 8 triangles and place on prepared baking sheet.
  8. Bake for 14–18 minutes, or until golden and cooked through. Let cool completely.
  9. Whisk glaze ingredients until smooth and spread over cooled scones.
  10. Whisk spiced drizzle ingredients and drizzle over glazed scones. Let set before serving.

Notes

Chill the dough before baking for cleaner edges.Use maple syrup in the glaze for extra fall flavor.Add chopped pecans or walnuts for crunch.Store unglazed scones in the freezer for up to 2 months.Use plant-based milk and butter to make dairy-free.
