  • 1 9-inch pie crust (homemade or store-bought)
  • 4 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 4 large eggs
  • 1 cup milk or cream
  • 1/2 cup chopped onion (optional)
  • 1 clove garlic, minced (optional)
  • 1 cup shredded cheese (Swiss, cheddar, or feta)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp nutmeg (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. If using fresh spinach, sauté in a pan until wilted, then drain excess moisture.
  3. If using onion or garlic, sauté until soft and fragrant.
  4. In a bowl, whisk together eggs, milk or cream, salt, pepper, and nutmeg.
  5. Roll out the pie crust into a 9-inch pie dish and trim excess edges.
