Spiced Gingerbread Loaf is a moist, warmly spiced quick bread made with molasses, brown sugar, and a cozy blend of ginger, cinnamon, and cloves. Easy to prepare and perfect for the holidays, it’s ideal for breakfast, snacking, or gifting.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 2/3 cup molasses
  • 2 large eggs
  • 3/4 cup milk or buttermilk
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a standard loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  3. In a large bowl, whisk together melted butter, brown sugar, molasses, eggs, milk, and vanilla extract (if using) until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Slice and serve plain, or with butter or a glaze if desired.

For a citrus twist, add 1 tbsp orange zest to the batter.Top with a vanilla or lemon glaze for extra sweetness.Fold in 1/2 cup chopped nuts or dried cranberries for texture.Use flax eggs and plant-based milk for a vegan version.Flavor improves on the second day—great make-ahead option.
