Spice Cake is a moist, tender dessert infused with warm spices like cinnamon, nutmeg, ginger, and cloves. Perfect for fall and holiday baking, it’s simple to make and delicious with or without frosting.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1 cup buttermilk (or 1 tablespoon vinegar + milk to make 1 cup)
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped nuts or raisins
  • Optional: Cream cheese frosting or powdered sugar for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 8-inch round cake pans.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In another bowl, beat together the eggs, brown sugar, granulated sugar, oil (or melted butter), buttermilk, and vanilla extract until well combined.
  4. Gradually stir the dry ingredients into the wet mixture until just combined.
  5. If using, fold in chopped nuts or raisins.
  6. Pour the batter into the prepared pan(s) and smooth the top.
  7. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
  9. Frost with cream cheese frosting, dust with powdered sugar, or serve plain.

Notes

Grated apple or pumpkin puree can be added for extra moisture.This cake improves in flavor after a day—perfect for making ahead.For cupcakes, bake at 350°F for 18–22 minutes.Store frosted cake in the fridge and bring to room temp before serving.Use gluten-free 1:1 flour blend to make it gluten-free.
