Snickerdoodle Cobbler is a warm, comforting dessert that combines the cinnamon-sugar flavor of classic snickerdoodle cookies with the gooey, syrupy filling of a cobbler. This easy-to-make treat has a soft, cake-like topping and a cinnamon-spiced fruit filling, making it the perfect dessert for fall or any time of year. For the filling:
4 cups peeled and sliced apples (or pears, peaches, or your preferred fruit)
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
1 tablespoon cornstarch (for thickening)
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
For the topping:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup unsalted butter, melted
1/2 cup granulated sugar
1/2 cup milk
1 teaspoon vanilla extract
For the cinnamon-sugar topping:
2 tablespoons granulated sugar
Prepare the filling:
Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish. Toss sliced apples (or other fruit) with sugar, cinnamon, nutmeg (if using), cornstarch, lemon juice, and vanilla extract in a large mixing bowl. Pour the fruit mixture into the prepared dish and spread evenly.
