Ingredients

For the Rice Krispie Mixture:

  • 6 cups Rice Krispies cereal

  • 4 cups mini marshmallows (or regular marshmallows, chopped)

  • 3 tablespoons unsalted butter

  • ½ cup graham cracker crumbs (plus extra for topping)

  • ½ cup semi-sweet chocolate chips

  • ½ cup milk chocolate chips (optional, for extra creaminess)

  • 1 teaspoon vanilla extract (optional)

Instructions

Preparing the Rice Krispie Mixture:

  1. Melt the butter and marshmallows: In a large pot, melt the butter over medium heat. Once melted, add the marshmallows and stir until smooth, about 3-4 minutes. Be careful not to burn them by keeping the heat low to medium.

  2. Add vanilla extract (optional): Once the marshmallows are melted, stir in the vanilla extract for extra flavor.

  3. Combine with Rice Krispies: Remove from heat and immediately add the Rice Krispies cereal. Stir until evenly coated with the marshmallow mixture.

  4. Add graham cracker crumbs: Gently stir in the graham cracker crumbs, mixing until well combined to give it that signature s’mores flavor.

Assembling the S’mores Rice Krispie Treats:

  1. Transfer to a pan: Lightly grease or line a 9×13-inch baking dish with parchment paper. Press the Rice Krispie mixture into the dish, using a spatula or your buttered hands to spread it evenly.

  2. Melt the chocolate: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each until smooth. You can also melt over a double boiler.

  3. Drizzle the chocolate: Once the Rice Krispie mixture is pressed into the pan, drizzle the melted chocolate evenly over the top. If you want, mix semi-sweet and milk chocolate chips for a richer topping.

  4. Top with graham cracker crumbs: Sprinkle additional graham cracker crumbs over the chocolate to enhance the s’mores flavor.

Cooling and Serving:

  1. Let it set: Allow the treats to cool at room temperature for about 30 minutes or until the chocolate is firm.

  2. Cut into squares: Once cooled, cut into squares or bars. Serve and enjoy the gooey, chocolatey goodness!

Notes

Variations: Add peanut butter to the marshmallow mixture for a richer flavor or top with extra mini marshmallows for a more marshmallow-forward bite.Chocolate Choices: You can substitute milk, dark, or white chocolate for the topping based on your preference.
