S’mores Cookie Bars combine the best parts of a classic campfire treat into a convenient, chewy bar form. With gooey marshmallows, melted chocolate, and crunchy graham crackers, these bars are sure to satisfy your sweet tooth.

Ingredients

  • For the cookie dough:
    • 1 cup unsalted butter (softened)
    • 3/4 cup brown sugar (packed)
    • 1/4 cup granulated sugar
    • 2 large eggs
    • 1 1/2 tsp vanilla extract
    • 2 1/2 cups all-purpose flour
    • 1 tsp baking soda
    • 1/2 tsp salt
  • For the filling:
    • 1 1/2 cups mini marshmallows (or regular-sized, cut in half)
    • 1 cup chocolate chips (milk or dark, depending on preference)
    • 1 cup graham cracker crumbs (about 810 graham crackers crushed)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it for easy removal.
  2. In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy and well combined. This should take about 2-3 minutes.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until everything is well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated.
  5. Press about two-thirds of the cookie dough into the bottom of the prepared pan, making sure to spread it evenly across the bottom.
  6. Sprinkle the graham cracker crumbs evenly over the dough, followed by a layer of mini marshmallows and chocolate chips.
  7. Drop spoonfuls of the remaining cookie dough over the top of the marshmallows and chocolate. It doesn’t need to cover the entire surface, as the marshmallows and chocolate will spread out as they bake.
  8. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean (but be careful not to overbake to keep the marshmallows gooey).
  9. Allow the bars to cool in the pan for about 10-15 minutes before slicing into squares. If you want to make them even more indulgent, drizzle with a little extra melted chocolate or top with more mini marshmallows and graham cracker crumbs.

Notes

For a vegan version, substitute the butter with plant-based butter and use dairy-free chocolate chips and marshmallows.To add a crunchy twist, sprinkle chopped nuts like pecans or almonds on top of the bars.For extra gooeyness, layer the chocolate chips and marshmallows twice—once in the middle of the dough and again on top.If you don’t have graham crackers, substitute with digestive biscuits, shortbread, or even animal crackers, crushing them into small pieces.To make these bars even more indulgent, drizzle with extra melted chocolate or top with additional marshmallows and graham cracker crumbs after baking.
