Ingredients

  • 2 pounds chicken breasts or chicken thighs
  • ½ cup balsamic vinegar
  • ½ cup chicken broth
  • 4 cloves garlic, minced
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup cherry tomatoes or diced tomatoes (optional)
  • Fresh basil or parsley for garnish

Instructions

  • Place the chicken breasts or thighs in the slow cooker.
  • In a medium bowl, whisk together the balsamic vinegar, chicken broth, garlic, honey, olive oil, Italian seasoning, onion powder, salt, and black pepper.
  • Pour the balsamic sauce evenly over the chicken.
  • Add the tomatoes if using.
  • Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken is tender and fully cooked.
  • Remove the chicken briefly and stir the sauce.
  • For a thicker sauce, simmer uncovered for several minutes or stir in a cornstarch slurry made from 1 tablespoon cornstarch mixed with 1 tablespoon water.
  • Return the chicken to the slow cooker and coat it in the sauce.
  • Garnish with fresh basil or parsley before serving.
