Skillet Shepherd’s Pie is a comforting, one-pan meal featuring seasoned ground meat and vegetables in a savory gravy, topped with creamy mashed potatoes and baked until golden. It’s a quick and hearty take on the classic dish, perfect for weeknight dinners or meal prep.

Ingredients

  • 1 lb ground beef or ground lamb
  • 1 tablespoon olive oil or butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup frozen peas or mixed vegetables
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • 1 tablespoon all-purpose flour
  • Salt, to taste
  • Black pepper, to taste
  • 3 cups mashed potatoes (prepared fresh or leftovers)
  • 1/2 cup grated Parmesan or cheddar cheese (optional)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat oil over medium heat. Sauté onion and carrots for 5–7 minutes until softened.
  3. Add garlic and cook for 1 minute.
  4. Add ground beef or lamb, breaking it apart as it cooks, and cook until browned. Drain excess fat if needed.
  5. Stir in tomato paste, Worcestershire sauce, salt, and pepper.
  6. Sprinkle flour over the meat mixture and stir to combine.
  7. Pour in beef broth and cook until thickened into a gravy, about 5–10 minutes.
  8. Stir in frozen peas or vegetables and remove from heat.
  9. Spoon mashed potatoes evenly over the top of the filling.
  10. Sprinkle with cheese if using.
  11. Bake for 15–20 minutes until hot and bubbly. Broil for 2–3 minutes for a golden top if desired.
  12. Let rest for 5 minutes before garnishing with parsley and serving.
