Ingredients

  • 1 lb chicken breast or thighs
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups egg noodles
  • 2 tbsp olive oil or butter
  • Salt, to taste
  • Black pepper, to taste
  • 1 bay leaf
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice (optional)

Instructions

  • Heat olive oil or butter in a large pot over medium heat.
  • Add onion, carrots, and celery. Sauté until softened (about 5–7 minutes).
  • Stir in garlic and cook for 1 minute until fragrant.
  • Add chicken, chicken broth, bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 20–25 minutes until chicken is fully cooked.
  • Remove chicken, shred into bite-sized pieces, and return to the pot.
  • Add egg noodles and cook according to package instructions until tender.
  • Taste and adjust seasoning.
  • Stir in fresh parsley and lemon juice (if using).
  • Serve warm.
