Shrimp guacamole bites are fresh, flavorful appetizers featuring creamy homemade guacamole topped with seasoned shrimp, served on crispy or refreshing bases like tortilla chips, cucumber slices, or toasted baguette rounds. They’re perfect for parties or casual snacking.

Ingredients

  • 2024 cooked shrimp (peeled and deveined)
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 1/4 cup finely chopped red onion
  • 1/4 cup diced cherry tomatoes
  • 1 small jalapeño, finely chopped (optional)
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder or 1 clove garlic, minced
  • Base for serving: tortilla chips, cucumber slices, or toasted baguette rounds
  • Optional garnish: cilantro leaves, lime zest

Instructions

  1. In a bowl, mash avocados and mix in lime juice, red onion, cherry tomatoes, jalapeño (if using), cilantro, salt, and pepper to make the guacamole. Set aside.
  2. In another bowl, toss shrimp with olive oil, garlic powder (or minced garlic), salt, and pepper. If needed, lightly sauté in a skillet over medium heat for 2–3 minutes until heated through.
  3. Arrange your chosen base (tortilla chips, cucumber slices, or toasted baguette rounds) on a serving platter.
  4. Spoon a dollop of guacamole onto each base.
  5. Top each with one shrimp and garnish with a cilantro leaf or lime zest if desired.
  6. Serve immediately.

Notes

Best assembled just before serving to prevent sogginess.Use pre-cooked shrimp for a no-cook version.Add mango or pineapple to the guacamole for a tropical twist.Press plastic wrap directly on the guacamole to keep it from browning if prepping ahead.Use gluten-free chips or cucumber slices for a gluten-free option.
