Shrimp Fried Rice is a quick and flavorful dish that combines succulent shrimp, savory vegetables, and perfectly cooked rice, all tossed in a delicious soy-based sauce. Ingredients

  • 1 lb shrimp (peeled, deveined, and tails removed)

  • 2 tablespoons vegetable oil (divided)

  • 2 cups cooked rice (preferably day-old rice)

  • 1/2 cup peas (frozen or fresh)

  • 1/2 cup carrots (diced)

  • 3 green onions (chopped)

  • 2 cloves garlic (minced)

  • 2 large eggs (beaten)

  • 3 tablespoons soy sauce (low-sodium preferred)

  • 1 tablespoon sesame oil

  • 1 tablespoon oyster sauce (optional, for extra umami flavor)

  • Salt and pepper to taste

Instructions

  • Cook the Shrimp:
    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set them aside.

  • Sauté the Vegetables:
    In the same skillet, add the remaining 1 tablespoon of vegetable oil.
    Add the diced carrots and cook for 2-3 minutes until slightly tender.
    Add the peas, garlic, and green onions, and cook for an additional 1-2 minutes until fragrant.

  • Scramble the Eggs:
    Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side.
    Scramble the eggs until fully cooked, then mix them with the vegetables.

  • Add the Rice:
    Add the day-old rice to the skillet and break up any clumps with a spatula.
    Stir everything together until the rice is evenly mixed with the vegetables and eggs.

  • Season the Rice:
    Drizzle the soy sauce, sesame oil, and oyster sauce (if using) over the rice mixture. Stir well to coat the rice evenly.
    Add the cooked shrimp back to the skillet and toss everything together to combine.

  • Serve:
    Taste the fried rice and adjust the seasoning with salt and pepper if needed.
    Serve the Shrimp Fried Rice hot, garnished with additional green onions if desired.
