This Sheet-Pan Salmon with Melting Leeks is a simple yet elegant one-pan meal featuring tender roasted salmon and buttery, caramelized leeks. Infused with garlic, lemon, and fresh herbs, this easy salmon recipe is perfect for a healthy weeknight dinner or a refined, restaurant-quality dish at home.

Ingredients

  • 4 salmon fillets
  • 3 large leeks, cleaned and sliced
  • 3 tbsp butter (divided)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh thyme or dill, chopped

Instructions

  • Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper or lightly grease it.
  • Place sliced leeks on the pan, drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
  • Dot the leeks with small pieces of butter and roast for 10–15 minutes until they begin to soften.
  • Remove the pan from the oven and place salmon fillets on or beside the leeks.
  • Season salmon with salt, pepper, and lemon zest.
  • In a small bowl, mix melted butter, garlic, and lemon juice. Spoon over the salmon.
  • Return to the oven and roast for another 10–12 minutes, until salmon flakes easily and leeks are tender and slightly caramelized.
  • Garnish with fresh thyme or dill and serve immediately.
