This easy Sesame Soba Noodles recipe features nutty soba noodles tossed in a savory sesame sauce with fresh vegetables and crunchy toppings. Perfect served warm or cold for meal prep, quick lunches, or light dinners.

Ingredients

Noodles

  • 8 ounces soba noodles
  • 1 cucumber, thinly sliced
  • 1 cup shredded carrots
  • 3 green onions, sliced
  • 1 tablespoon sesame seeds
  • Fresh cilantro, optional
  • Red pepper flakes or chili oil, optional

Sesame Sauce

  • ¼ cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons peanut butter or tahini

Instructions

  • Cook the soba noodles according to package instructions until tender.
  • Drain the noodles and rinse under cold water to stop the cooking process and remove excess starch.
  • In a medium bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, garlic, ginger, and peanut butter until smooth and creamy.
  • Place the cooked noodles in a large mixing bowl.
  • Pour the sesame sauce over the noodles and toss until evenly coated.
  • Add the cucumbers, shredded carrots, and green onions.
  • Toss again until the vegetables are evenly distributed.
  • Top with sesame seeds, cilantro, and optional chili flakes or chili oil before serving.
  • Serve chilled or slightly warm.
