Salted Caramel Apple Pie Bars are a handheld twist on classic apple pie, with layers of buttery shortbread crust, spiced apple filling, and cinnamon crumble topping, all finished with a drizzle of rich salted caramel.

Ingredients

  • Crust:
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1 cup unsalted butter, cold and cubed
  • Apple Filling:
  • 45 medium apples (Granny Smith, Honeycrisp, or mix), peeled and diced
  • 2 tbsp lemon juice
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp all-purpose flour or cornstarch
  • Crumble Topping:
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, cold and cubed
  • Finishing:
  • 1/2 cup salted caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. Make the crust: In a bowl, combine flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter or fingers until crumbly. Press evenly into the prepared pan. Bake for 15–18 minutes until lightly golden. Let cool slightly.
  3. Prepare the filling: In a large bowl, toss diced apples with lemon juice, sugar, cinnamon, nutmeg, and flour or cornstarch. Set aside.
  4. Make the crumble: In a separate bowl, combine flour, brown sugar, and cinnamon. Cut in butter until mixture resembles coarse crumbs.
  5. Spread the apple filling over the cooled crust. Sprinkle crumble topping evenly over apples.
  6. Bake for 35–40 minutes, or until topping is golden and apples are tender.
  7. Let bars cool completely in the pan. Drizzle with salted caramel sauce before slicing.
