Rotisserie chicken salad is a creamy, flavorful dish made with shredded rotisserie chicken, mayonnaise, crisp vegetables, and fresh herbs. Quick to prepare and versatile, it’s perfect for sandwiches, wraps, or a light lunch on its own.

Ingredients

  • 1 rotisserie chicken, shredded (skin and bones removed)
  • 1/2 cup mayonnaise
  • 1 stalk celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper, to taste
  • Optional add-ins: grapes, dried cranberries, pecans, almonds, or fresh dill

Instructions

  1. Remove the skin and bones from the rotisserie chicken. Shred the meat into bite-sized pieces.
  2. In a large bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  3. Add the shredded chicken, celery, onion, and parsley. Stir until everything is evenly coated.
  4. Mix in any optional add-ins, such as grapes, nuts, or fresh herbs, if desired.
  5. Cover and chill for at least 30 minutes before serving for the best flavor.

Notes

Use both white and dark meat for the best flavor.Replace some or all of the mayo with Greek yogurt for a lighter version.Pat vegetables dry to prevent watery salad.Best served chilled in sandwiches, wraps, or lettuce cups.Store in the refrigerator for up to 4 days. Not freezer-friendly.
