Rotel Dip is a creamy, savory, and slightly spicy cheese dip made with melted Velveeta, ground beef and zesty Rotel tomatoes with green chilies. Perfect for parties, game days, or casual gatherings, this dip is easy to make and always a crowd-pleaser.

Ingredients

  • For the Dip:
  • 1 lb ground beef

  • 16 oz Velveeta cheese, cubed

  • 1 (10 oz) can Rotel diced tomatoes with green chilies, undrained

Instructions

    • Cook the Meat: In a large skillet over medium-high heat, cook the ground beef until browned. Drain excess fat.

    • Add Rotel and Cheese: Stir in the undrained can of Rotel tomatoes and cubed Velveeta cheese.

    • Season: Stir in chili powder or taco seasoning to taste, if desired.
