Roasted sweet potatoes are crispy on the outside, tender on the inside, and naturally sweet. This easy side dish is perfect for weeknights, holidays, or meal prep and can be flavored savory, spicy, or sweet.

Ingredients

  • 2 lbs sweet potatoes, peeled or unpeeled, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional seasonings: 1 tsp garlic powder, 1 tsp smoked paprika, 1/2 tsp cinnamon, pinch of cayenne, or fresh herbs (rosemary, thyme, oregano)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut sweet potatoes into 1-inch cubes (peeling optional).
  3. In a large bowl, toss sweet potatoes with olive oil, salt, pepper, and desired seasonings.
  4. Spread in a single layer on prepared baking sheet, leaving space between cubes for crispiness.
  5. Roast 25–30 minutes, flipping halfway through, until golden brown and fork-tender.
  6. Serve hot as a side dish or add to salads, bowls, or wraps.
