Ingredients

  • 8 oz dark chocolate (finely chopped)
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 cup dry red wine (e.g., Cabernet Sauvignon or Merlot)
  • 1/2 tsp vanilla extract (optional)
  • Cocoa powder, powdered sugar, or melted chocolate (for coating)

Instructions

  1. In a small saucepan, heat the heavy cream and butter over medium heat until it begins to simmer.
  2. Remove from heat and pour over the chopped chocolate in a heatproof bowl. Let sit for 2–3 minutes.
  3. Stir until the chocolate is fully melted and smooth.
  4. Add red wine and vanilla extract (if using) and mix until well combined.
  5. Cover the bowl and refrigerate for 2–3 hours, or until firm enough to scoop.
  6. Using a small cookie scoop or spoon, form balls of ganache and roll them between your hands.
  7. Roll each truffle in cocoa powder, powdered sugar, or dip in melted chocolate for coating.
  8. Place truffles on a parchment-lined tray and refrigerate until firm.
