Rainbow cupcakes are vibrant, multi-colored vanilla cupcakes topped with creamy frosting, perfect for celebrations and sure to bring joy to both kids and adults.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • Red, orange, yellow, green, blue, and purple food coloring
  • Frosting of choice (buttercream recommended)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with 12 paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  5. Alternately add the dry ingredients and milk to the butter mixture, mixing just until combined.
  6. Divide the batter evenly into six bowls and color each with a different food coloring.
  7. Layer small spoonfuls of each color into the cupcake liners to create a rainbow effect.
  8. Bake for 18–22 minutes, or until a toothpick inserted comes out clean.
  9. Cool completely on a wire rack before frosting.
  10. Top with swirls of frosting and optional rainbow sprinkles.
