Ingredients

  • 1 cup cooked rice
  • 1 cup refried beans or black beans
  • 1 ½ cups shredded Monterey Jack or cheddar cheese
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • Sour cream for serving (optional)
  • Sliced jalapeños for serving (optional)

Instructions

  • Heat olive oil in a skillet over medium heat.
  • Add diced onion and cook until softened, about 3–4 minutes.
  • Stir in minced garlic and cook for about 30 seconds until fragrant.

  • Season with cumin, salt, and black pepper.
