Ingredients

  • 6 slices thick bread (such as Texas toast, brioche, or challah)
  • 3 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1/3 cup pumpkin puree
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • Butter or oil for cooking
  • Optional: maple syrup or powdered sugar for serving

Instructions

  1. Slice the bread into sticks about 1-inch wide.
  2. In a large bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, pumpkin pie spice, and cinnamon until smooth.
  3. Dip each bread stick into the pumpkin mixture, coating all sides, and let excess drip off.
  4. Heat a skillet or griddle over medium heat and add butter or oil.
  5. Cook the bread sticks in batches, turning to brown all sides, about 2–3 minutes per side.
  6. Transfer cooked sticks to a paper towel-lined plate.
  7. Serve warm with maple syrup or a dusting of powdered sugar.
