Pumpkin Cut-Out Cookies are festive, spiced treats perfect for fall and the holiday season. With real pumpkin and warm spices, they hold their shape when baked, making them ideal for decorating or enjoying plain.

Ingredients

  • 1/2 cup pumpkin purée
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • Optional: frosting or icing for decorating

Instructions

  1. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  2. Mix in the pumpkin purée, egg, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and ginger.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together.
  5. Divide the dough into two discs, wrap in plastic wrap, and chill for at least 1 hour.
  6. Preheat the oven to 350°F (175°C).
  7. Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
  8. Cut into desired shapes using cookie cutters and place on parchment-lined baking sheets.
  9. Bake for 8–10 minutes, or until the edges are just starting to turn golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. Decorate with frosting or icing if desired.
