Pumpkin Bars are soft, moist dessert squares filled with warm spices and rich pumpkin flavor, topped with a creamy frosting or served plain for a lighter treat—perfect for fall gatherings or cozy days at home.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 1 (15 oz) can pumpkin puree
  • 1 teaspoon vanilla extract
  • Optional Cream Cheese Frosting:
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In another large bowl, beat the eggs, granulated sugar, and brown sugar until smooth.
  4. Mix in the oil, pumpkin puree, and vanilla extract until well combined.
  5. Gradually stir the dry ingredients into the wet mixture until fully incorporated.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the bars cool completely before frosting.
  9. To make the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla extract, and beat until fluffy.
  10. Spread the frosting over cooled bars. Cut into squares and serve.
