Ingredients

  • 1 packet active dry yeast

  • 1 cup warm milk (about 110°F/45°C)

  • ¼ cup granulated sugar

  • ½ cup vanilla pudding mix (instant, not prepared)

  • ½ cup unsalted butter, softened

  • ½ teaspoon salt

  • 4 cups all-purpose flour (more for dusting)

  • 2 large eggs

  • 2 tablespoons butter (for brushing, optional)

Instructions

Preparing the Dough:

  1. Activate the yeast: In a small bowl, combine warm milk, sugar, and yeast. Stir until sugar dissolves and let it sit for 5-10 minutes, until foamy.

  2. Mix the dry ingredients: In a large mixing bowl, whisk together flour, vanilla pudding mix, and salt. Make a well in the center.

  3. Combine wet ingredients: Pour the yeast mixture and eggs into the well and stir until a dough forms.

  4. Knead the dough: Transfer the dough to a lightly floured surface and knead for 5-7 minutes, until smooth and elastic. Add flour sparingly if the dough is too sticky.

  5. Let it rise: Place the dough in a greased bowl, cover with a towel or plastic wrap, and let it rise in a warm place for 1-1.5 hours, until doubled in size.

Shaping and Baking the Rolls:

  1. Preheat the oven to 350°F (175°C).

  2. Shape the rolls: Punch down the dough, divide it into 12 equal pieces, and roll each piece into a ball.

  3. Arrange the rolls: Place the dough balls in a greased 9×13-inch baking dish or parchment-lined baking sheet, close but not touching.

  4. Second rise: Cover and let the rolls rise for about 30 minutes, until puffed up.

  5. Bake the rolls: Bake for 20-25 minutes, or until golden brown and hollow-sounding when tapped.

  6. Brush with butter: Optional—brush the rolls with melted butter after baking for extra softness and shine.
