1 packet active dry yeast
1 cup warm milk (about 110°F/45°C)
¼ cup granulated sugar
½ cup vanilla pudding mix (instant, not prepared)
½ cup unsalted butter, softened
½ teaspoon salt
4 cups all-purpose flour (more for dusting)
2 large eggs
Preparing the Dough:
Activate the yeast: In a small bowl, combine warm milk, sugar, and yeast. Stir until sugar dissolves and let it sit for 5-10 minutes, until foamy.
Mix the dry ingredients: In a large mixing bowl, whisk together flour, vanilla pudding mix, and salt. Make a well in the center.
Combine wet ingredients: Pour the yeast mixture and eggs into the well and stir until a dough forms.
Knead the dough: Transfer the dough to a lightly floured surface and knead for 5-7 minutes, until smooth and elastic. Add flour sparingly if the dough is too sticky.
Let it rise: Place the dough in a greased bowl, cover with a towel or plastic wrap, and let it rise in a warm place for 1-1.5 hours, until doubled in size.
Shaping and Baking the Rolls:
Preheat the oven to 350°F (175°C).
Shape the rolls: Punch down the dough, divide it into 12 equal pieces, and roll each piece into a ball.
Arrange the rolls: Place the dough balls in a greased 9×13-inch baking dish or parchment-lined baking sheet, close but not touching.
Second rise: Cover and let the rolls rise for about 30 minutes, until puffed up.
Bake the rolls: Bake for 20-25 minutes, or until golden brown and hollow-sounding when tapped.
Brush with butter: Optional—brush the rolls with melted butter after baking for extra softness and shine.
Serving:
Serve warm with butter, honey, or alongside your favorite meal. They’re also great for dipping into soups or salads
