Poppy seed chicken casserole is a creamy, comforting dish made with tender chicken, a rich sauce, and a buttery cracker topping with poppy seeds. Perfect for family dinners, potlucks, or cozy weeknight meals.

Ingredients

  • 4 cups cooked chicken, shredded or cubed
  • 1 can (10.5 oz) cream of chicken soup (or homemade substitute)
  • 1 cup sour cream (or Greek yogurt for lighter version)
  • 1 sleeve Ritz crackers (about 30), crushed
  • 1/2 cup butter, melted
  • 1 tbsp poppy seeds
  • Salt and pepper, to taste
  • Optional: 1 tsp garlic powder, 1 tsp onion powder, 1 cup shredded cheddar or mozzarella

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine chicken, cream of chicken soup, sour cream, and seasonings. Stir until well mixed.
  3. Spread mixture evenly into prepared baking dish.
  4. In another bowl, mix crushed crackers with melted butter and poppy seeds.
  5. Sprinkle cracker topping evenly over the chicken mixture.
  6. Bake uncovered for 25–30 minutes, until hot and bubbly with a golden topping.
  7. Serve warm with rice, pasta, or vegetables.
