Ingredients

  • 3 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1 1/2 cups crushed Ritz crackers (about 1 sleeve)
  • 1/4 cup butter, melted
  • 1 tbsp poppy seeds
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1/2 tsp garlic powder, 1/2 tsp onion powder, 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a 9×13-inch baking dish.
  3. In a large mixing bowl, combine sour cream and cream of chicken soup until smooth.
  4. Add shredded chicken, salt, pepper, and optional seasonings and cheese. Mix well.
  5. Spread the chicken mixture evenly in the prepared baking dish.
  6. In a separate bowl, mix crushed crackers with melted butter and poppy seeds.
  7. Sprinkle the cracker mixture evenly over the chicken filling.
  8. Bake uncovered for 25–30 minutes, until golden and bubbly.
  9. Let cool for 5 minutes before serving.
