Ingredients

  • 4 cups cooked chicken, shredded or cubed
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 sleeve (about 30) Ritz crackers or similar buttery crackers, crushed
  • 1/2 cup butter, melted
  • 1 tbsp poppy seeds

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine sour cream, cream of chicken soup, salt, and pepper. Mix until smooth.
  3. Fold in the cooked chicken until evenly coated in the sauce.
  4. Transfer the chicken mixture to a greased 9×13-inch baking dish and spread it out evenly.
  5. In a separate bowl, combine crushed crackers with melted butter and poppy seeds. Stir until the crumbs are evenly coated.
  6. Sprinkle the cracker topping evenly over the chicken mixture.
  7. Bake uncovered for 25–30 minutes, or until the casserole is hot and bubbly and the topping is golden brown.
  8. Let sit for a few minutes before serving.
