Pistachio pasta is a creamy, nutty, and flavorful dish that blends roasted pistachios with herbs, garlic, and olive oil to create a smooth, velvety sauce. It’s a unique and elegant alternative to traditional pasta sauces, perfect for any occasion.

Ingredients

  • 12 oz pasta (spaghetti, fettuccine, penne, or fusilli)
  • 1 cup roasted, unsalted pistachios (shelled)
  • 2 garlic cloves
  • 1/3 cup olive oil
  • 1/4 cup grated Parmesan cheese (or 2 tbsp nutritional yeast for vegan)
  • 2 tbsp lemon juice
  • 1/4 cup fresh basil or parsley
  • Salt and pepper to taste
  • 1/2 cup reserved pasta water
  • Optional: red pepper flakes for heat

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a food processor, combine pistachios, garlic, olive oil, lemon juice, herbs, Parmesan (or nutritional yeast), salt, and pepper. Blend until smooth.
  3. Add a few tablespoons of reserved pasta water to the processor and blend again until desired sauce consistency is reached.
