Ingredients

  • 8 oz goat cheese, softened
  • 4 oz cream cheese (optional, for extra creaminess)
  • 1/2 cup shelled pistachios, chopped
  • 12 tsp fresh herbs (thyme, rosemary, or parsley), chopped
  • 1 tbsp olive oil or honey, for drizzling
  • Salt and black pepper, to taste
  • Crackers, crostini, or fresh vegetables for serving

Instructions

  1. In a medium bowl, combine goat cheese and cream cheese (if using) until smooth and creamy.
  2. Stir in half of the chopped pistachios, reserving the rest for topping.
  3. Season with salt, pepper, and fresh herbs.
  4. Transfer the mixture to a serving dish and top with remaining pistachios.
  5. Drizzle with olive oil or honey before serving.
  6. Serve with crackers, crostini, or fresh vegetables.
