Pineapple Coconut Lime Popsicles are a refreshing, tropical treat made with pineapple, coconut milk, and lime. These easy-to-make, dairy-free, and vegan popsicles are perfect for hot days or as a fun treat for any occasion.

Ingredients

  • 2 cups fresh pineapple, chopped (or use frozen pineapple)
  • 1/2 cup coconut milk (full-fat or light)
  • 1/4 cup coconut water (for added refreshment)
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon maple syrup or agave syrup (optional, depending on the sweetness of your pineapple)
  • 1/2 teaspoon lime zest (optional, for extra citrus flavor)

Instructions

  1. Blend the ingredients: In a blender, combine the pineapple, coconut milk, coconut water, lime juice, maple syrup (if using), and lime zest (if using). Blend until smooth and creamy. Taste the mixture and adjust the sweetness if needed by adding more maple syrup or agave.
  2. Pour into popsicle molds: Pour the blended mixture into popsicle molds. If you don’t have popsicle molds, you can use small cups or ice cube trays with wooden sticks as an alternative.
  3. Freeze: Insert sticks into the molds (if using molds with sticks) and place the popsicles in the freezer. Freeze for at least 4-6 hours, or until the popsicles are completely set.
  4. Unmold and serve: Once frozen, run warm water over the outside of the popsicle molds for a few seconds to help loosen the popsicles. Gently pull them out and serve immediately. Enjoy your tropical, refreshing treat!
